Zimtplätzchen – Cinnamon biscuits

The Germans have a tendency to line up what could become a sentence to form a German word. Zimtplätzchen (the “ä” is as in tree) or cinnamon cookies/biscuits is actually made of “zimt” (cinnamon) and “plätzchen” which rather refers to biscuits made during the festive season.

Zimtplätzchen can come in different shapes and forms. The point is they’re a sort of shortbread dough with cinnamon.

I have used the same dough for VanillaKipferln except that I added cinnamon and almond flakes.

So basically I’ll be re-posting the recipe previously posted with the additions to it. I personally made 2 batches of the vanillakipferln dough and handled the second batch differently..


Adapted from “Backen für Weihnachten”
Makes 70  vanilla kipferln
Prep: 20 min- Resting time: 15 min or 1 hour- baking: 12-15 min
  • 140g butter
  • 100g ground almonds (toasted in a hot oven at 160 degrees C for 8 min or so then cooled)
  • 200g of flour
  • 100 g of sugar (fine caster sugar)
  • 2 eggs yolks
  • 1 tsp of vanilla extract pod
  • 1 tsp of cinnamon
  • A pinch of salt


  • 1 egg yolk
  • 1 tbsp of milk
  • 40g of almond flakes
  • 1 tbps of caster sugar mixed with a good pinch of cinnamon (optional)

PreparationCream the sugar and the butter. Add the remaining ingredients. Mix together to homogenize the dough. 

Form a ball and flatten it to form an “abaisse”. Cover with a cling film and transfer to a freezer for 15 min or to the fridge for 1 hour.

Preheat oven to 170 ° C.
Roll the dough (between 2 baking sheets) anywhere between 5 mm to 1 cm maximum.
Cut shapes either with cookie cutters or just by using a knife.
Transfer the biscuits onto a baking sheet covered with baking paper. Mix the egg yolk and milk then brush the biscuits. Sprinkle with almond flakes then give them a light pressure with your fingers to make sure they stick to the surface.
Sprinkle with sugar/cinnamon and bake for 12- 15 min until nicely golden.
Transfer the zimtplätzchen to a wire rack to cool. Store them in a biscuit tin for a week or maybe more..They get better the next days because of the cinnamon in them..

  1. Hi Nada, I was lucky enough to get an entire bag full of different German Christmas cookies from my German colleague last year, so I can understand what you meant in your previous post when you said you missed Germany – I guess especially around times like this!Great cookies!


  2. Thanks Charles! Oh I found the morello cherries in M&S, but then I wouldn't have used them anyway because they're soaked in Kirsch (which is the authentic stuff anyway)..I do miss Germany and especially at this time of the year. They have fascinating Christmas markets!
