20 min meal: Express pizza and fattoush salad with Labneh dip

I’ve been eyeing that pizza flyer for days now but to be honest, Pizza hut is not my fav type of pizza makers especially in Qatar because, oddly enough, they do not even use olive oil and they have no idea about the existence of spicy olive oil. But they offer you ketchup to go with it! If you fancy that! I don’t.

Anyway, they’re few places here in Doha where we enjoy the pizza; Biella restaurants serve good ones, with the right crust and the right seasonings. Not that we are very demanding but there are things that just seem right and some which do not!

That said, my husband is away for a couple of days and I just don’t fancy going out, except to get fresh pita bread and some fresh veggies. On my way, I passed by the Iranian shop to get some dried mint. I admit they have a nice one! I’m Moroccan, I pretend to know a lot about mint (the Moroccan mint tea and the many types and versions), Excuse me!

So here is what I’ve come up with for my dinner in exactly 20 min : Yummy express pizza on pita bread and a  fresh Lebanese Fattoush salad for my good conscience.

One inspired Greek style Pizza and one Napolitana with Rocket

The ingredients of the pizza depend really on what you like to eat at a particular moment. I just picked this mix of ingredients that you will find almost in every pantry and in most of the supermarkets.

Ingredients for 2 medium pizzas

Prep: 5 min/ Baking: 10 min

– 1 pita or Arabic bread, medium size
– 1/2 green pepper (capsicum)
– 1/2 small onion
– 1 sprig of thym (or dried one)
– A few black olives
– Feta cheese – Few basil leaves
– 5 tbsp of homemade tomato sauce (tomato, garlic, onion, salt, pepper, olive oil)
– 6 tbsp of shredded Mozzarella or fresh buffalo
– Freshly ground pepper
– 2 tbsp of olive oil

Preparation of the pizza
Open 1 pita bread into 2 circles, spread the tomato sauce on the face of each one (choose the inner side so it absorbs the sauce) and sprinkle some shredded mozzarella.
On the Greek style pizza: add chopped green pepper and onion, kalamata olive or any black olive, feta cubes. Finish with some fresh or dried thym and drizzle some olive oil on the top.
On the Napolitana inspired pizza: put some basil leaves around the pizza and drizzle with olive oil. I usually put the basil underneath the cheese so it doesn’t get damaged by the direct heat.
Finally, you are free to crush some black pepper on the top, add a sprinkle of hot chilli powder for a kick.
Bake in a preheated oven at 220 degrees C. Serve hot, warm or cold at your liking. If you fancy that, add the rocket leaves on the top of the Napolitana and you’re done!
If you feel like turning it into a wrap that’s fine! I do that too!

Ingredients for the fattoush salad and Labneh
For 2 persons
Prep: 5 min
– 1 big ripe tomato, diced
– 1 persian cucumber, diced
– 1/2 green pepper, diced
– 1/2 small onion, diced
– Lettuce, diced ( I didn’t have)
– Radish ( I didn’t have)
– Thym and mint, fresh or dried
– Salt and pepper
– Olive oil
– 1/2 Lemon juice
– A hint of sumac powder ( I didn’t have)
– Few pieces of pita bread, toasted in the oven
– 2 tbsp of fresh labneh (replace with Greek yoghurt if you don’t have)
Preparation of the fattoush
Mix everything except Labneh that you need to decorate with olive oil and mint. Salad is ready!

Well, it took 20 mins to come up with this dinner, 7 mins to eat it and 30 min to write this post!
